The nebbiolo grape is declined in this D.O.C. Langhe to exalt the peculiarities of our hills and bring some tradition on our tables. A young wine, but at the same time important, where the tannins with delicate softness and spicy aromas inebriate the nose, also recalling vanilla and caramelized notes. A wine that make every day a bit more special.
Denomination: Langhe D.O.C. Nebbiolo.
Grape variety: 100% Nebbiolo.
Area of production: Langhe.
Vinification: Crushing and destemming; fermentation in stainless steel at a controlled temperature of 28-30°C. Maceration on the skins for 10 days, with daily pumping of the must over the cap.
Final refining.
Cellar life: 10 years.
Also this wine, being produced with 100% Nebbiolo grapes, is a very good friend of the classic Piedmontese dishes with red meats and game, such as wild boar, roasted veal or stewed rabbit.
The combinations, however, may be the most imaginative: a chicken salad or an appetizer made from vegetables, such as peppers with tuna sauce.
Nebbiolo grapes gives life to one of the most important Piedmont wines and, perhaps, in the world: Barolo and Barbaresco.
The name derives from the fact that the harvest of nebbiolo is the last one, usually in October, when there is fog (in Italian “nebbia”), or because the berries are covered with a sort of patina, “pruina”, which would remember the haze.
